From the street the golden glow is inviting to even the weariest of travelers and the moment you walk in the door you will feel transported to a modern Parisian bistro (where everyone magically speaks English). The servers move diligently like bees in their embroidered vests and perfectly ironed shirts and ties. The small bar bustles with laughter and anecdotes from friends and nostalgic neighbors. It’s shoulder to shoulder on a busy night but this just seems to make everyone that much more familiar with each other. When you step into the dining room the worker bees are at full attention taking orders, filling glasses, clearing tables & resetting linens. It’s a beautiful and silent piece of choreography. The spirits are vivacious and perfectly mixed. The wines are all hand picked from the expected French and California houses to smaller boutiques you’ll fall in love with. The dishes though traditional in nature are constantly being elevated to new levels using local farms contemporary techniques. Our kitchen seems to have it’s hand on the pulse of new and fresh ideas so fear not our vegetarian and gluten-free friends, this is a friendly place.
Aquitaine was designed in the ‘Bistro Moderne’ movement. The 1990s saw traditional bistros reinvented by chefs who had been formally trained in France’s more formal kitchens. They brought with them new, more advanced techniques and ideas and succeeded in reversing the decline of these old establishments.
